Autumn, fall, the best season of the year – whatever you call it, it’s here!!
We just took a couple of weeks and drove the trailer out to Custer, SD and on our way back had a few days in Yellowstone National Park. We had a few days of cooler weather, but our last day before we got home, it was still almost 80F.


Once we got home, it’s barely been 65 degrees! The weather has certainly shifted to fall! I noticed yesterday on my way home from church that the trees are changing too.
Things feel a bit earlier than usual this year, but everything this year has been early. (Blueberries were ripening in mid-June instead of the usual July!)
One thing I decided to do now at the start of soup season is to have mirepoix ready! If you don’t know what mirepoix is, it’s the basics of soup – celery, carrots and onion.
We recently took a quick trip to the business Costco and I grabbed a bag each of celery, carrots and onions. I chopped up all of the celery, and about half of the carrots and onions. (I was glad to be done with the onions. My eyes do NOT like cutting onions!!)

I have a vegetable chopper that made the job a LOT faster! I highly recommend one.
I filled a tray of each for my freezer dryer. I kept the onion tray a bit less as I freeze dry onions with bread on top as that absorbs the scent and the machines doesn’t smell of onions afterward.
I also had enough chopped to almost fill a gallon ziplock bag to put in the freezer.
Once the freezer dryer was finished, I vacuum-sealed everything into mason jars which will go in the closet for easy access.

While we initially got the freeze dryer to make backpacking meals, I have loved that I have ingredients ready to go in the pantry. It’s great for those evenings I have been sewing too long and forgot to prep anything for dinner!
I have a small Harvest Right freeze dryer and am so glad we got it! If you ever think about wanting or needing one, I highly recommend one!
